I think most of you know that I have a great love for slow cookers. Who doesn’t? Nothing beats coming home to the tantalizing aroma of a marvelous dinner and the work is already done. Yes. I’m a stay-at-home mom but that rarely means I actually stay at home all day. And on those days that I KNOW are going to super busy, I like to plan ahead with a yummy slow cooker meal that the whole family will enjoy.

My Slow Cooker Chicken Parmesan is sooo delicious! The chicken is so moist and flavorful and it just doesn’t get any easier! If you want to bread your chicken before browning, you totally can. I was just cutting down on mess, time, and calories by leaving it out. You might want to try this once without the breading first {I bet you’ll find you don’t miss it one bit!}

5 SECRETS TO GETTING DINNER ON THE TABLE...FAST!

  • 6 boneless, skinless chicken breasts
  • 2 Tbls olive oil
  • 1 lg onion, thickly sliced
  • 1/2 tsp Italian Seasoning
  • 32 ounces pasta/spaghetti sauce {use your favorite, the flavors just intensify during cooking}
  • 1/2 cup parmesan cheese {I used shaved Parmigiano Reggiano that I had on hand}
  • 1 cup + grated mozzarella cheese

Instructions:

Heat olive oil in a large skillet. Lightly brown the chicken on both sides. Don’t overcrowd the pan.

Slice up onion into nice thick slices and place in the bottom of your slow cooker. Add the browned chicken breasts and sprinkle Italian Seasoning over the top. Pour pasta sauce over the chicken. The chicken should be completely covered with the sauce.

Cook on low for 5-7 hours. {I was in a hurry and checked early and my chicken was done in about six hours. Depends on the size of your breasts. I could totally insert a joke here but this blog is rated G.}

Slow Cooker Chicken ParmSprinkle chicken with parmesan and mozzarella cheeses. Continuing cooking, uncovered until cheeses melt.
